Our quick recommendation

Get an eSIM before you fly, and keep home roaming off. Leave the home SIM in the phone for calls, texts, and bank codes, with mobile data pointed at the travel plan. A tourist SIM at the airport is the other workable option when you want a local number or the phone has no eSIM.
